Steps

Boil Soya Chunks and squeeze excess water.

Marinade soya chunks with curd + salt + turmeric powder + cumin powder + coriander powder + Kasuri Methi.

Marinade for 30 - 40 minutes.

Assemble ingredients for gravy / curry.

Cut boiled potato into cubes.

In moderately heated pan add 1 tbsp oil, add potato cubes + little salt and sauté for 3-4 minutes under medium flame and keep aside.

In moderately heated pan add oil, allow to heat, add all whole spices and allow to crackle, then add ginger + garlic and sauté for few seconds.
Then add chopped Onion and sauté till golden brown. - 8
Add chopped Tomato and sauté for around 2 minutes till tomato turn mushy.

Add all dry spices + 2 tbsp water and sauté till spices leaves oil and turn aromatic.

Then add marinaded soya chunks/ nuggets and sauté for 3-4 minutes.

Add water + salt and cook for 4-5 minutes. Add Garam Masala powder + salt + potatoes in this stage.

Add chopped Coriander, mix well.

Cook further for 2-3 minutes, keep in stand by mode for 2 minutes and dish is done.

Serve with Phulka or Paratha or Naan 🫓
