First of all wash arbi properly so that all the dirt is removed. Now boil it for 15 minutes or until cooked. It should be soft enough to cut with the knife easily. Do not overcook it otherwise it will become soft and sticky. Now let it cool down and peel the skin. Cut it into round discs or desired shape.

Heat two tbsp oil in a pan and add the arbi pieces to it and cook it on medium to high heat until golden brown in colour from both sides. Take it out in a bowl.

Heat two tbsp oil in the same pan and add cumin and carom seeds. Now add asafoetida, finely chopped green chilli and ginger paste to it and cook it for a few seconds. Now add turmeric powder, red chilli powder, coriander cumin powder, garam masala, amchur powder for and salt to it. Give it a good mix. And fried arbi pieces to it and mix everything well.

Cook it on medium heat for 3 to 5 minutes and add finely chopped green coriander leaves. Turn off the heat.

Now our very delicious Dry Arbi Masala is ready for serve. Serve this delicious sabji along with roti, dal and rice.
