Ingredients

Serves 4 servings

corn tortillas
dried guajillo chiles, cleaned and soaked
soaking water
cooked carrots and potatoes, diced
sour cream
grated Cotija cheese
shredded lettuce, washed and sanitized
salt, garlic, black pepper, and onion
as neededvegetable oil,

Fry the cooked carrots and potatoes in a skillet. Set aside.

Blend the guajillo chiles with the spices and sauté the mixture in a saucepan. Set aside.

Dip the tortillas in the hot chile sauce, then quickly fry them for a few seconds. Place them on a serving plate, fill with the vegetables, and roll to form about 3 enchiladas per plate.

Top with more chile sauce, lettuce, cheese, and sour cream. Enjoy.
