Potato and Ground Pork Croquettes

My mother used to make these croquettes for me a lot.
They're my husband's favorites, so he requests them all the time.
You can use just half a frying pan full of oil to fry these croquettes. Drain the oil very well after frying to ensure a light crispy finish.
You can use vegetable oil to sauté the onions too. For 6 croquettes. Recipe by Pandakosan

Cooking Instructions

Heat a teaspoon of olive oil in a frying pan.

This is about the amount of ground pork needed. I used 200 g.

Saute the chopped up onion in the frying pan. Season with salt and pepper.

When the onion is transparent, add the ground pork.

When they are about this color, sprinkle on a little more salt and pepper to bring the flavor together. (About 1 shake of pepper and 2 shakes of salt.)

Peel the potatoes, cut into half then cut each half into 6 pieces. Put the pieces in a bowl of water, then drain. Steam the potato pieces in the microwave for 4 to 5 minutes. (If your microwave oven doesn't have a Steam function, just sprinkle the potato pieces with water and cook.)

When the potatoes are cooked, poke a piece with a toothpick. If it goes through they are done. Check them while they are cooking so that they don't get too mushy or burned.

Mash the potatoes while they're still hot. Just mash them as much as you like.

Add the sauteed onion and ground pork to the potato, and season with salt and pepper. Taste before you add the salt and pepper; it may not need it.

Divide into 6 portions, and form into patties.

Coat the formed patties in flour, beaten egg, then panko.

When the patties are coated, make the oil ready.

Fill a frying pan about half full with vegetable oil. Heat the oil to 180°C, then add the patties. Fry until golden brown on both sides and they're done.
