Ingredients

Serves 4 servings
  1. Ingredients for marinating the chicken
  2. 1.1 lbsboneless, skinless chicken breast, cut into strips (500 grams)
  3. 1 tablespoonsoy sauce
  4. 3/4 teaspoonsalt
  5. 1 tablespoonrice wine
  6. 1 teaspoonchopped ginger
  7. 1 clovegarlic, finely chopped
  8. Orange sauce
  9. 1 cupfresh orange juice
  10. 2 teaspoonssugar
  11. 1 tablespoonsoy sauce
  12. 2 1/2 teaspoonscornstarch
  13. Other ingredients
  14. 1/4 cupvegetable oil
  15. 1/3 cupscallions, sliced diagonally
  16. 8.8 ozfresh snap pea pods or broccoli (250 grams)
  17. 1/2red bell pepper, cut into thin strips
  18. 1/2 cupunsalted roasted peanuts, skins removed

Steps

40 minutes
  1. 1

    Marinate the chicken: In a small bowl, mix the soy sauce, salt, rice wine, chopped ginger, and finely chopped garlic. Add the chicken and toss to coat. Let marinate for 20 minutes.

  2. 2

    Make the orange sauce: In a bowl, combine the orange juice, sugar, soy sauce, and cornstarch. Mix well.

  3. 3

    Stir-fry the chicken: Heat the oil in a wok or large skillet over high heat until it just starts to smoke. Add the chicken and stir-fry until cooked through.

  4. 4

    Add the scallions, snap pea pods (or broccoli), and red bell pepper. Cook until the snap peas are bright green.

  5. 5

    Add the orange sauce mixture and peanuts. Cook until the sauce thickens.

  6. 6

    Serve with rice or Chinese noodles.
