Upsidedown Apricot Cake

Take and gather the dry ingredients for the cake mixture. Take a whisk and incorporate them well. Add the wet cake mixture ingredients, and mix well. Set aside.

To the cast iron skillet I am baking in I added the butter, sugar, and molasses to it and started melting the butter. When the sugar is melted and it's mixed together well turn off the heat.

Wash and dry the apricots. Do not peel them. Slice the apricot in half and remove the pit/ seed/ stone. Set the pits aside. Slice the apricot into thin wedges.

If you want to know which direction to slice the apricots. In the pictures I am showing an indention going around one side. Almost looks like a dried creek bed in a valley, well maybe not just cut all the way around the apricot and you will fill the stone/pot/ seed inside. It's called all those things. Well add the slices to the sugar, molasses, butter mixture forming a circle.

When the bottom of skillet is covered with apricot slices gentle like pour the cake batter over the top of the apricot slices. When the batter is spread out and the oven is 350 ° Fahrenheit add the cake in the skillet into the oven.

Allow to cook till the sides are pulling away from the sides of the skillet. Make sure the sides are browned edged. Mine took 35 minutes in oven. Take a butter knife and runaround the sides of the skillet to be sure.Take the flattest plate and put on top of the skillet eating side down, towards skillet. Use a hot pad holder on handle of skillet. Put your other hand on center of plate firmly holding on, and flip it.

Let rest 5 minutes. Cut and serve immediately, room temperature, warm, or cold. The three granddaughters wanted more I said after dinner when your mom gets home from work. I hope you enjoy!!!
