Ingredients

4 servings
  • 250 gmsfresh Pineapple chopped into small pieces
  • 1 litrefull fat milk
  • 1/2 cupsugar
  • 1/4th tsp salt
  • 6 tspmilk powder
  • 2 tspcornflour
  • 2 tbspalmonds and cashewnuts chopped
  • 1 pinchsaffron soaked in 2 tbsp warm.milk
  • 1/4th tsp cardamom powder
  • 1 tspghee

    Peel and chop pineapple into small cubes.Blend half of pineapple cubes into a thick paste. Set aside.

    Heat 2 tbsp sugar in a non-stick pan. When the sugar starts caramelizing, add the pineapple cubes and 1 tsp ghee.Toss and add pineapple pulp and 1/4 th cup water.Bring it to boil and cook till moisture dries up and the caramelized sugar is dissolved and coats the pineapple chunks.Set aside to cool.

    Meanwhile boil milk. When it starts boiling,add milk powder by dissolving it in half cup warm milk.Continue boiling milk in medium heat till reduced to half.Make a slurry of cornflour and add it the milk.Stir continuously to prevent milk from sticking underneath till it attains a thick consistency. Sprinkle cardamom powder and set aside to cool.

    Add saffron soaked milk and half of chopped nuts.Mix well.Refrigerate till kheer thickens.Now add the pineapple and garnish with remaining chopped nuts.Serve chilled.
