Ingredients

1/2 hour
2 people, 2 large soup dinners
  1. 1whole Carcass of smoked duck, meat removed, has flavor traces of ginger, soy, vinegar, honey, tea, pepper, salt
  2. 4 cupswater
  3. 1/2 cupwild rice, steamed 60 minutes, makes full cup
  4. 1 slicecured bacon, diced
  5. 1peeled and minced clove of elephant garlic
  6. 1whole yellow onion, sliced in rings
  7. 1 cupwhite button mushrooms sliced in half
  8. 1nest of mung bean noodles
  9. 2green onion stalks, chopped
  10. 1 Tbschopped fresh parsley

Cooking Instructions

  1. 1

    Fry chopped bacon, onion slices, button mushrooms, elephant garlic clove in cast iron skillet till brown, about fifteen minutes.

    Place carcass of smoked duck in dutch oven, count the bones, should be 10 to 12, cover with water. Simmer 15 minutes. Add chopped bacon, carmelized onions, and garlic.

    Add cooked wild rice with nest of mung bean noodles, chopped green onions, chopped italian parsley to soup. Simmer till noodles are soft, few minutes. Stir, remove duck carcass bones, count, should be 10 to 12, put in garden fermenter, serve.
