Wash methi well and chop finely. Keep all the ingredients ready. Mix the flours and masalas.

Add in methi leaves and 2tbsp oil.

Mix well and add very little water and knead a smooth medium consistency dough.

Smoothen the dough using a little oil. Rest the dough for 10 minutes. Then make small roll shaped muthiyas.

Put the muthiyasin medium hot oil. Now fry on slow gas until well cooked.

When proper colour is attained drain off the extra oil and take out the muthiyas. At first these appear to be soft, but on cooling, they turn crispy and tasty. If there are some cracks on the muthiyas, it indicates that these are properly made.

Fry all and cool completely, and fill into airtight box.

Enjoy a tasty tea time snack. This is a good snack for travelling also.
