Grind or pound the garlic, cilantro roots, and black peppercorns in a mortar until fine. Then, slice the lemongrass diagonally into pieces and add to the blender or mortar to grind finely. This will enhance the aroma.

Use a sharp fork or knife to pierce the chicken wings all over. Then, take the blended mixture (cilantro roots, garlic, black pepper) and lemongrass and spread it over the chicken. Add fish sauce, sugar, oyster sauce, and sesame oil. Mix the chicken thoroughly with your hands. Marinate in the refrigerator for at least 30 minutes, but in this recipe, it's marinated for 3 hours as it's prepared for dinner. Marinating overnight is even better.

Take the chicken wings out to bring them to room temperature. Grill over low heat until cooked, garnishing with cilantro. If you have a convection oven, place the wings on a rack and grill at 392°F (200°C) for 15 minutes or until cooked. The skin will be crispy and separate from the bone, while the inside remains juicy.
