Dhekra is a traditional and seasonal recipe from South Gujarat. It is a speciality of Anavil Brahmin community. They are made from fresh pigeon peas(lilva) and various flours. Dhekra is a sweet and spicy winter snack which taste best with tea coffee or various chutneys. It can also be a good option for tea parties , picnic etc.
Initial process of Dhekra is similar to popular Gujarati delicacy Khichu, though some ingredients and processes vary from home to home.

Ingredients

  • 1 cupfresh lilva/pigeon
  • 1-1/5 cupwater
  • 1 tbspginger paste
  • 1 tspchilli paste
  • 2 tbspjaggery
  • 1 tbspsesame seeds
  • 1/4 tspturmeric powder
  • 1 cuprice flour
  • 2 tbspwheat flour
  • 2 tbspsorghum flour
  • 1 tbspgram flour
  • Salt to taste
  • Oil for frying

    Pressure cook pigeon peas. Heat water and add sesame seeds, chilli paste, ginger paste, turmeric powder and jaggery. Once it starts boiling, add pigeon peas and salt and let it boil till jaggery melts completely.

    Then turn off the flame and cover it and let it cook in steam for 10-15 minutes. After 15 minutes, open the lid, add one tbsp oil and knead it smooth for 3-5 minutes. Then prepare small patties like dhekra.

    Heat the oil and deep fry them on medium heat till it becomes golden brown. Serve hot or cold with tea coffee or chutneys.

    Note:
    1. Can add, garlic, coriander too.
    2. Dhekra can stay for a couple of days at room temperature.
