Cauliflower, Potato, and Pea Curry

Cooking Instructions

Clean the cauliflower and cut it into pieces. Cut the potatoes into large pieces as well. Gather all the ingredients. Chop 1 onion into large pieces. In a blender jar, add the onion, garlic, green chilies, tomato, and ginger, and make a paste.

Turn on the stove and place a pan. Add 1 tablespoon of oil. Once hot, add the cauliflower pieces and fry them, then remove. In the same pan, add the remaining oil and sliced onion.

Once the onion turns golden, add the spice paste and all the dry spices, and salt. Sauté well until the oil starts to separate.

Once the spices are cooked, add the potatoes, peas, and fried cauliflower. Cover and cook on low flame for 5 minutes.

After 5 minutes, add 2 cups of water, add the garam masala powder, cover, and cook for another 5 minutes.

After 5 minutes, check if the gravy has thickened. Turn off the stove, add finely chopped cilantro, transfer to a serving bowl, and serve with chapati, puri, or rice.

My challenge with this dish was to replace the usual chicken with chickpeas. I didn't want to have the taste compromised and I wanted to provide an authentic tasting curry. I love Indian food. My favorite dishes to eat and make are curry potatoes and tikka masala. I have tweaked each recipe to a point that I feel like they're as perfect as they'll get. As I make it, this curry is not spicy, because I pair it with a spicy tikka masala and the flavors balance perfectly. If you want to spice it up, use hot curry powder in place of the regular curry powder or add up to 1/2 tsp cayenne pepper. This also works extremely well as a vegetarian main dish. StephieCanCook -
