Nothing is as wholesome as this daal recipe from my sister-in-law. Perfect to eat with rice as a side or with your roti of choice.

Soak your daal for an hour while you prep the other ingredients.

In a pot of hot 2 tbsp oil, throw in 1 tsp mustard seeds and let roast. Add the curry leaves, pandan leaf/ramba. Roast for 30 seconds before adding the 1/2 green chilies, 2 cloves garlic, and 1.5 onions. Roast for 2 mins on medium heat. Add the 1/2 tsp turmeric.

Drain the daal and add it to your pot. Add your 1 tsp salt. Pour water to cover the daal. Cover the pot and bring to a boil. Make sure not all of the water is evaporated. If it is, add more. When you have a thick consistency, add 3 tbsp of thick coconut milk. Cover again.

While you're boiling the daal, temper your 3 dried chilies, 1 tbsp Chili flakes, 1 tsp mustard seeds, pandan leaf, 2 cloves diced garlic, and 1.5 onions in 2 tbsp of oil. Temper until brown and well roasted.

Add your tempered mix into your pot of boiled daal. Mix well and adjust salt as necessary.
