Sautéed Beef Liver and Garlic Mashed Potatoes

With a small, sharp knife, remove any membrane around the piece of liver. Also remove the membrane around the vein openings. Cut the liver into strips or small pieces. Measure and prepare the rest of the ingredients.

MAKE THE GARLIC MASHED POTATOES
Place the potatoes in a pot with water and a pinch of salt. Cook until tender, then drain the water. Add the milk and heat together with the butter.
In a small skillet, heat the olive oil and sauté the garlic until fragrant but not browned. Add the parsley and cook for a few seconds. Add the sautéed garlic and parsley to the potatoes and mash. Season with salt and pepper to taste. - 3
SAUTÉ THE LIVER
Heat a skillet with a little olive oil and sauté the bell peppers, onion, and garlic together until just tender-crisp. Transfer to a plate. - 4
Reheat the skillet with a little more olive oil, then sauté and brown the pieces of liver.
Add the sautéed vegetables, salt, soy sauce, crushed red chili, and cilantro to the liver. Stir to combine, heat through, and serve with the garlic mashed potatoes.
