Chicken gravy over rice

Ingredients

  1. 1very large chicken breast or 2 normal size chicken breasts
  2. 2carrots, peeled & chopped
  3. 1-2 stalkscelery, chopped
  4. 1yellow onion, diced
  5. 4 Tbsunsalted butter
  6. Salt, black pepper, garlic powder to taste
  7. 3 Tbsflour
  8. 1 Tbsminced garlic
  9. 2 cupsChicken broth
  10. 1/2 tspthyme
  11. 1/2 tsporegano
  12. 1 tspsmoked paprika
  13. 1 tsponion powder
  14. Optional: 1/2 bell pepper, minced

Cooking Instructions

    Get your skillet over medium heat and add 3 tbs butter. Place in your veggies. Lightly season with garlic powder & black pepper. Cut your chicken breasts in half lengthwise and season with garlic powder and black pepper.

    Once the veggies start to soften, add 1 more tbs of butter. Add your flour, stirring it together to make a roux. Add minced garlic & chicken broth, stir. Season with pepper, oregano, thyme, paprika, onion powder & garlic powder. Stir.

    When it starts bubbling, add the chicken to the skillet. Make sure to cover chicken with the gravy, bring heat up to medium high for it to boil then bring it down to medium low, place a lid on & let cook for 15 minutes.

    Shred chicken with two forks, mix let cook for 2 minutes. Serve over rice or mashed potatoes.
