Quinoa Khichdi

Soak quinoa in water overnight, wash it, strain it, add in a pressure cooker. In goes lil salt & 1 tsp oil. Add 1.5 cup water, place the lid, give 4 whistles on high flame. Turn off the flame, allow it to depressurise naturally. Open the lid after 5 minutes, take out in a bowl, keep aside.

Soak dal for 1/2 hr, wash it, keep aside. Take another pressure cooker, add ghee, heat it.

In goes laung, hing, zeera, let it splutter. Now add onion & green chilli, stir fry it until light brown.

Add in ginger garlic, saute it for a minute, now add matar, carrot & gobhi, stir fry it for a minute.

In goes tomato, stir fry it for a minute. Add in haldi powder, dhania powder & red chilli powder, mix it well. Stir fry it for a minute.

Now add dal & cooked quinoa, mix it well. Stir fry it for 2 minutes.

In goes garam masala powder, mix it well. Add 3 cup water (adjustable), salt & sugar, mix it well. Boil it for 5 minutes on high flame.

Place the lid, give 5 whistles on high flame, lower the flame, cook it for 15 minutes.

Turn off the flame, allow it to depressurise naturally. Open the lid after 10 minutes.

Take out in a serving bowl or dish, garnish it with dhania sprig...
