This is our family recipe for pastiera, featuring pastry cream and a crisp pastry shell.

For the pastry shell, mix the flour, 2 tablespoons lard, 2 whole eggs, and 1 egg yolk. Let the dough rest.

In a saucepan, cook the wheat berries with a little water, 1 tablespoon lard, and lemon peel for about 30 minutes.

In a bowl, mix the ricotta cheese with the sugar and egg yolks.

Combine the prepared mixtures: the ricotta mixture, the pastry cream, and the drained, cooled wheat berries.

Add the orange extract and candied fruit.

From the dough, roll out two disks, one larger than the other.

Use the larger disk to line a greased and floured 11-inch (28 cm) baking pan.

Pour in the filling.

From the smaller disk, cut seven strips and arrange them on top in a lattice pattern.

Bake at 350°F (180°C) for two hours.
