The origin of this recipe: I wanted to use sweet potatoes as a lunch box side dish, so I cut them into a size that fits easily into a lunch box and sautéed them in butter.
Cooking Instructions

Cut the sweet potato, with skin on, into 1/2-inch thick diagonal slices or rounds, then cut into 1/2-inch wide sticks (see photo). Soak in water to remove bitterness.

After soaking for about 10 minutes, drain lightly and place on a plate. Cover with plastic wrap and microwave for about 3 minutes at 500W.

Heat a frying pan and melt the butter. Add the sweet potatoes, season with salt and pepper, and sauté.

Finally, add sugar and continue to sauté until done.
