Cooking Instructions

Peel the thin skin off the edamame and add them to the kombu dashi mixed with dissolved kudzu starch.

Blend until smooth using a blender or similar device.

Strain through a fine-mesh sieve. (You can use the leftover edamame in salads or bread dough.)

Cover with a lid (or plastic wrap) and microwave at 600W for 1 minute, then stir.

Cover again with a lid (or plastic wrap) and microwave at 600W for another 1 minute, then stir.

Finally, remove the lid and microwave at 600W for 30 seconds, then stir until smooth.

Place plastic wrap in a bowl, add about 2 tablespoons of the edamame tofu from step 6, and form into a pouch.

Chill in ice water.
