Ingredients

35 minutes
6-8 servings
  • 5medium zucchini, sliced
  • 7-8mushrooms, sliced
  • 1 tsponion salt
  • 2 tbspall-purpose flour
  • 1 tspdried parsley
  • 2 tspbaking powder
  • 2 tspgarlic powder
  • 6large eggs, beaten
  • 12 ozshredded Cheddar cheese
  • 4 tbspbutter, melted
  • 1 cupcrushed cornflakes

Steps

35 minutes
  1. 1

    Preheat oven to 350 degrees.

  2. 2

    Spray the bottom & sides of a 13x9 baking dish with cooking spray.

  3. 3

    Combine flour, parsley, baking powder, & garlic powder in medium bowl & mix well. Stir in eggs.

  4. 4

    Layer half the zucchini, mushrooms, onion salt, cheddar, egg mixture, butter, & cornflakes in prepared dish. Repeat layers with remaining ingredients.

  5. 5

    Bake for 30-35 minutes, until set.
