Enjoy pumpkin sauté with colorful marinade. The refreshing marinade enhances the sweetness of the pumpkin. The origin of this recipe: I wanted to enjoy the combination of the pumpkin's sweetness with the marinade's tanginess.
Cooking Instructions

Thinly slice the onion using a slicer and soak in water.

Mix the marinade ingredients well. Add the squeezed onion from step 1 and torn prosciutto, and mix together.

Thinly slice the pumpkin. Heat olive oil in a frying pan and cook the pumpkin on both sides until done.

Place the pumpkin on a plate and top with the marinade from step 2. Garnish with parsley for color, if desired.
