Cut the stems off the eggplants, slice them in half lengthwise, and score the skin in a crosshatch pattern. Soak in salted water for 10 minutes to remove bitterness.

Cut the bell peppers into 2–4 strips lengthwise and remove the seeds and stems.

In a small saucepan, combine all the marinade ingredients except the green onion. Heat until it comes to a boil, then remove from heat and stir in the green onion.

Pat the eggplants dry and fry them in vegetable oil heated to 350°F (175°C) until tender. Quickly fry the bell peppers as well.

Arrange the drained eggplants in a container and pour the marinade evenly over them.

You can eat them after marinating for about 10 minutes, but they're also delicious chilled.

These marinated eggplants are great as a topping for chilled ramen or somen noodles.

You can also marinate fried chicken in the leftover marinade to make a chicken namban-style dish!
