Cooking Instructions

Cut the pork tenderloin into slices about 1/2 inch thick, cover with plastic wrap, and pound with a rolling pin.
- 2
Roll the rolling pin over the meat to make it evenly thin.
- 3
Sprinkle both sides with salt and pepper.
- 4
Coat both sides with all-purpose flour.
- 5
Mix the ingredients marked with ◎ to make the egg mixture.
- 6
Heat a frying pan, add vegetable oil, and dip the floured pork slices into the egg mixture before placing them in the pan.
- 7
Cook for 3-4 minutes, then flip and cook for another 2-3 minutes until both sides are nicely browned.
- 8
Place on a plate.
- 9
If desired, add a little extra touch to the sauce. Wrap the sauce in plastic wrap, secure with a rubber band, and poke holes with a toothpick.
- 10
Do the same with the mayonnaise, wrapping it in plastic wrap and poking holes with a toothpick.
- 11
Drizzle the finished piccata with the sauce and mayonnaise for a stylish look. If you have chopped parsley, sprinkle it on top.

It's also great for lunch boxes!

I used to eat this dish a lot in my parents’ house. If the chicken is thick, it may take longer to cook. Pan-fry over low heat for a long time. Sprinkle some parsley flakes in the beaten eggs to add colors to the dish. It freezes well both before or after frying, but I usually freeze it after pan-frying. Paprika powder can be substituted with curry powder. Recipe by rie1029 cookpad.japan -
