I'm not good at making fried foods. The oil splatters everywhere... But I want my family to enjoy it, and I want to eat it too! Can you feel the crunchiness? ♪

The origin of this recipe
I'm not good at making fried foods. Until air fryers become more affordable, I want to make it without frying. If you use breadcrumbs as is, the meat cooks through, but the color isn't nice and it's not crunchy enough. After trying various methods, I settled on this one. Great for dieting too!

Ingredients

Serves 3 servings
  • 3 piecespork for tonkatsu
  • 1 tablespoonshio koji (or a pinch of salt and pepper if unavailable)
  • 1 cupall-purpose flour
  • 1egg
  • 2-3 cupsbreadcrumbs

Steps

  1. 1

    Pound the pork with a rolling pin, rub with shio koji, and let it sit for at least an hour. I do this in a plastic bag to reduce cleanup.

    To minimize cleanup, I open a milk carton, fold it, and staple it to use as a tray for the breadcrumbs and flour.

    Toast the breadcrumbs in a frying pan. Stir with a wooden spatula to prevent burning.

    Toast until golden brown. This is the color you want for the finished product.

    Preheat the oven to 430°F (220°C).

    Coat the pork from step 1 with flour, egg, and the golden brown breadcrumbs.

    Press the breadcrumbs firmly onto the pork.

    Place on a baking sheet lined with parchment paper and bake for 15 to 18 minutes until done!

    I like to eat it with Otafuku okonomiyaki sauce!
