Ingredients

Serves 1 serving
  1. 1 1/2 cupssoup (about 350 ml) (see Recipe ID:19349292)
  2. Kaeshi (seasoned soy sauce base)
  3. 2 2/3 tablespoonslight soy sauce (about 40 ml)
  4. 1 2/3 tablespoonsmirin (about 25 ml)
  5. 1/2 teaspoonMSG or umami seasoning
  6. Noodles
  7. 5 1/3 ozmedium-thick ramen noodles (about 150 g or more)
  8. Toppings
  9. 1–2 tablespoons chicken oil (about 15–30 ml) (see Recipe ID:18886087)
  10. Optional: rare chicken chashu (see Recipe ID:19633287)
  11. Optional: rare pork chashu (see Recipe ID:19648726)
  12. 1marinated soft-boiled egg
  13. Optional: mizuna greens, green onions, menma (bamboo shoots), nori (seaweed)

Steps

    [Chashu]
    Store-bought chashu is fine, too.

    [Kaeshi]
    Bring the ingredients marked with ★ to a boil and simmer for about 30 seconds to cook off the alcohol.

    Add 3 1/3 tablespoons (50 ml) of kaeshi and the MSG to a ramen bowl.

  5. 5

    Cook the noodles. Once cooked, drain thoroughly.

    Add the soup and then the noodles to the bowl, and gently mix from the bottom.

    Add your favorite toppings and enjoy!
