Stir-Fried Tender Chicken Breast and Bean Sprouts with BBQ Sauce

Slice the chicken breast diagonally into pieces about 3/8 inch (1 cm) thick, then cut each piece in half lengthwise. (They should be long and thin.)

Place the chicken in a bowl. Add the sake, sugar, salt, and mayonnaise, and mix well. Let it sit for a while.

This step helps make the chicken breast tender. (Prepping the chicken this way keeps it juicy.)

Rinse the bean sprouts with water, then drain them well in a colander.

Heat a frying pan and add oil. Add the bean sprouts and stir-fry, then transfer them to a bowl or plate.

Add the potato starch to the chicken in the bowl and mix to coat.

Add a little more oil to the frying pan you used for the bean sprouts. Spread out the chicken pieces in the pan, cover, and cook over medium heat for about 2 minutes.

When the chicken starts to change color, uncover and flip the pieces. Cover again and cook over low heat for 1 more minute.

Add the bean sprouts back to the pan and stir-fry briefly. Season with salt and pepper.

Add the BBQ sauce to the pan and mix until everything is evenly coated, then turn off the heat.
