Ingredients

Serves 1 (using a 6–8 inch (16–20 cm) skillet)
  1. 1egg yolk
  2. 1/4 cupmilk (50 ml)
  3. 10 dropsvanilla extract
  4. 1 pinchground cinnamon
  5. 1/3 cuppancake mix (50 grams)
  6. 1egg white
  7. 2 teaspoonssugar (10 grams)
  8. 2 teaspoonsbutter (10 grams)
  9. As needed, for topping: powdered sugar, lemon, butter, etc

Steps

  1. 1

    Mix the egg yolk, milk, and vanilla extract together. Add the pancake mix and cinnamon, and stir until the batter is smooth with no lumps.

  2. 2

    In a separate bowl, beat the egg white to make a meringue. Use a hand mixer, adding the sugar in two parts. Beat until stiff peaks form (about 80% stiff).

  3. 3

    Add half of the meringue to the batter and gently fold with a spatula. When just combined and slightly marbled, add the rest of the meringue and fold in until incorporated.

  4. 4

    Heat the skillet on the stove and melt the butter in it. Once the skillet is warm, pour in the batter.

  5. 5

    Bake in a preheated oven at 410–430°F (210–220°C) for 10–15 minutes. Once baked and slightly cooled, top with powdered sugar, lemon, butter, or your favorite toppings.
