  • Fresh Bell Pepper
  • Trader Joe's Meatless Meat
  • Corn
  • Black Beans
  • Quinoa
  • Serrano Peppers
  • Trader Joe's 21 salute seasoning

Steps

  1. 1

    Cut off pepper tops. Remove seeds.

  2. 2

    Dice pepper tops, sauté with 21 salute seasoning and meatless meat

    Prepare black beans, corn and quinoa

  4. 4

    In a large bowl mix, meatless meat, diced peppers, corn, beans, quinoa and raw sliced serrano peppers.

    Fill empty peppers with all ingredients. Bake at 350 for 15 minutes

  6. 6

    Serve with melted almond cheddar cheese and fresh avocado
