Cut off pepper tops. Remove seeds.

Prepare black beans, corn and quinoa

In a large bowl mix, meatless meat, diced peppers, corn, beans, quinoa and raw sliced serrano peppers.

Fill empty peppers with all ingredients. Bake at 350 for 15 minutes

Serve with melted almond cheddar cheese and fresh avocado
