Shred the imitation crab sticks by hand. Set aside a small amount for topping. In a bowl, mix together the ketchup, sake, sugar, and chili bean paste.

Heat the sesame oil in a pot. Add the garlic and ginger, and sauté until fragrant. Add the onion and continue to sauté.

Once the onion is coated with oil, add the shredded imitation crab and quickly stir-fry. Add the mixed sauce, water, and the ramen soup base. Simmer over medium-low heat for about 5 minutes.

While the soup is simmering, cook the ramen noodles according to the package instructions. Drain well.

Slowly pour the beaten egg into the soup, letting it drizzle in along chopsticks. When the egg starts to set, reduce the heat and add the cornstarch mixture to thicken the soup.

Place the cooked noodles in a bowl and pour the soup over them. Top with the reserved imitation crab and chopped mitsuba or cilantro. Adjust the spiciness to your liking, and enjoy!
