With a light, refreshing flavor, this dish is easy to enjoy.

I usually make this with fresh udon noodles, but tried it with frozen udon this time.

Thinly slice the onion.
Separate the komatsuna leaves and stems, then cut them into pieces.
Slice the sausage thinly on a diagonal.
Thaw the frozen udon noodles.

Heat the vegetable oil in a frying pan, then pour in the beaten egg.
When the egg is softly set, remove it from the pan and set aside. - 3
In the same pan, stir-fry the onion, sausage, and komatsuna stems.
Add the udon noodles and komatsuna leaves, then pour in the sake, hondashi, mentsuyu, and mirin.

Continue stir-frying.
Return the egg to the pan and mix everything together.
Transfer to a plate.

If you like, top with bonito flakes or shichimi togarashi (Japanese seven spice).
