Ingredients

Serves 1 serving
  • 1 packfrozen udon noodles
  • 1/3 cupsliced onion (about 45 grams)
  • 1/3 cupchopped komatsuna (Japanese mustard spinach) (about 40 grams)
  • 1sausage
  • 1egg
  • 2 teaspoonssake
  • 1 teaspoonmirin
  • 1 tablespoonmentsuyu (noodle soup base)
  • 1 teaspoonhondashi (Japanese soup stock granules)
  • 1 teaspoonvegetable oil

Steps

  1. 1

    Thinly slice the onion.

    Separate the komatsuna leaves and stems, then cut them into pieces.

    Slice the sausage thinly on a diagonal.

    Thaw the frozen udon noodles.

    Heat the vegetable oil in a frying pan, then pour in the beaten egg.
    When the egg is softly set, remove it from the pan and set aside.

    In the same pan, stir-fry the onion, sausage, and komatsuna stems.

    Add the udon noodles and komatsuna leaves, then pour in the sake, hondashi, mentsuyu, and mirin.

    Continue stir-frying.

    Return the egg to the pan and mix everything together.

    Transfer to a plate.

    If you like, top with bonito flakes or shichimi togarashi (Japanese seven spice).
