Sweet Potato Paste Imagawayaki

These are filled generously with sweet potato paste flavored with rum. Red bean paste is great, but sweet potato is amazing too!

These are filled generously with sweet potato paste flavored with rum. Red bean paste is great, but sweet potato is amazing too!

Use sweet potato paste that has been chilled in the refrigerator for a day. (See separate page for how to make it: ID21656122)

Mix all the ingredients marked with ☆ together well.

Brush oil onto a preheated imagawayaki pan and place a generous amount of sweet potato paste (about 1.4 oz/40 grams each) as shown in the diagram.

Cover with batter and cook over very low heat.

Cook both sides for 3–4 minutes each until golden brown. (Brush on more oil each time you flip them.)

It's nice if a little crispy edge forms!
