Avocado, Citrus, and Shrimp Salad
This appetizer alone probably ruins my entire carbon footprint for the year... but I admit, I just love avocado and grapefruit too much.

Remove the shells from the shrimp and arrange them on each plate.

Cut the avocados in half, remove the skin, dice them, and place half an avocado on each plate.

Do the same with the beet and pomelo: peel and dice, then divide evenly among the plates.
