Heat the ghee in a kadai add the grated carrots and stir on a medium flame for 4 to 5 minutes.

Add the milk and sugar and stir well continuously for 10 minutes, then add crushed almonds and cardamom and allow to cook under low flame for 5 more minutes.

The carrot halwa is ready. Serve it hot.
