Marinate the meat with the marinade mixture overnight. Cover and refrigerate to let the flavors absorb.

Mix the dipping sauce ingredients with chopped onion and garlic to taste. The sauce can be stored for a while; it will thicken and become syrupy. When ready to eat, add hot water to warm it up.

Slice the carrot and kohlrabi, rub with salt, then rinse well. Mix sugar and vinegar in a 1:2 ratio, add a pinch of salt, and blended garlic and chili to taste. Toss everything together and let it marinate, then refrigerate for later use.

Shape the ground pork into flat patties. Air fry each side for 5 minutes at 400°F (200°C). The ground pork patties take longer to cook than the pork belly slices.

Next, add the pork belly slices to the air fryer and cook each side for 5 minutes at 400°F (200°C). The pork belly cooks faster and can burn on the edges, so cook it after the patties.

Serve the grilled meats and pickled vegetables in a bowl with dipping sauce. Enjoy with vermicelli noodles and fresh herbs.
