Delicious barley pairs with pork ribs and yam, simmered easily in an electric rice cooker. The ingredients turn soft and tender, making this a low-carb, nutritious, and tasty wellness soup.

Prepare all the ingredients.

Rinse the barley and soak it for 3 hours.

Rinse the pork ribs and blanch them in boiling water to remove blood and impurities.

Peel and cut the yam into chunks. Peel and slice the ginger. Rinse the red dates and goji berries.

Place the pork ribs, barley, and ginger slices into the inner pot of an electric rice cooker.

Add the sweet rice vinegar and rice wine to the ingredients, then add enough water to cover everything. Move the pot to the rice cooker.

Add 2 cups of water to the outer pot of the rice cooker. Turn it on to cook the pork ribs and barley.

When the rice cooker switches off, open the lid and add salt and white pepper to season.

Add the yam and red dates to the pot, along with enough water to cover the ingredients.

Add 1 cup of water to the outer pot, turn the rice cooker on again. When it switches off, do not open the lid; let it sit for 10 more minutes.

Open the lid, add goji berries as desired, cover, and let it sit for another 5 minutes. The soup is ready to serve.

Tip:
* If you are sensitive to yam slime, wear gloves when handling.
