Steps

Boil raw jackfruit in pressure cooker with 1 whistle and immediately open lid. Raw Jackfruit should not be mushy.

In moderately heated pan / kadhai, add oil and allow to heat, add bay leaf + cumin seeds and allow to crackle, then add pre boiled potato cubes and sauté for 2-3 minutes.

Add ginger + tomato cubes + green chilli and sauté for around 2 minutes, tomato turns mushy.
Add all spices except Garam masala + 2-3 tbsp water and stir fry till spices turn aromatic and leaves oil. - 4
Add boiled raw jackfruit and sauté for 3-4 minutes under low to medium flame.

Add water and wait for a boil, then boil further for 5-6 minutes under medium flame.

Add sugar + garam masala powder + ghee, simmer for 2 minute and dish is done.

Serve with Phulka/ Paratha/ Rice
