Wash the spiny gourd (Kantola), peel it slightly and cut into pieces.

Heat oil in kadai or wok
After oil gets heated, add mustard seeds. When the mustard seeds start to flutter, lower the heat and add asafoetida, curry leaves and dry red chilies. Now Add chopped kantola and stir well with 1/4 cup of water. Cover the lid. - 3
After 5 minutes, stir and add 1/2 cup of milk and simmer.

Add red chili powder, coriander cumin powder, turmeric powder, grated coconut, sugar, lemon juice and salt. Mix everything well.

Simmer for 5 minutes.
After all water gets absorbed switch off the gas. - 6
So that spiny gourd subji is ready to serve.

We can serve spiny gourd subji with roti, salad and daal.
