Heat oil in a pressure cooker. Crackle cumin seeds. Add turmeric powder, asafoetida powder and Kashmiri chilli powder quickly followed by 2-3 tbsp water. Also add the hot chilli powder and let it cook till oil saperates.

Add the veggies and the masala paste. Add salt only after tasting because masala paste contains pretty much salt. Combine everything well and saute for a minute or two.

Add water till the surface of the veggies. Bring it to boil. Close the cooker lid. Allow it to whistle thrice on medium heat. Let it cool.

Open the lid and bring it to a boil or cook until oil oozes and the colour looks vibrant. Serve with rice and rotli
