Wash and soaked moong dal in water for 2-3 hours.then strain the water and grind the dal without adding water.

Take a mixing bowl add grind dal paste then add semolina and all the spices mentioned above including salt,add 1 tbsp ghee and mix all together.

Now add refined flour and wheat flour, dry fenugreek leaves. Mix well and make a dough, cover and keep aside for 10 minutes.

In a small bowl add 1tbsp ghee and 1tbsp flour mix well.keep aside.take the dough and make medium size balls from it. Take one ball and roll it like a big roti.apply the ghee and flour mixture all over it.

Then from one side start to roll it in a cylindrical shape. Roll it with hands then cut into1 inch pieces.

Take one piece press with palm and roll it gently. Make all mathri in the same way.

In a kadhai heat oil on medium flame and add some mathri in hot oil and fry them on low to medium flame till they turn golden.

Transfer them on kitchen towel.fry all the mathri. When it turns cool keep in an airtight container and enjoy with a cup of hot tea.
