Serves 4 servings

Sauce
about 1/2 cup dashi or water (100 ml)
about 1/2 cup soy sauce (120 ml)
about 1/2 cup rice vinegar (100 ml)
about 1/4 cup sugar (50 grams)
Sesame oil, to taste
1 teaspoonsweet bean sauce (tianmianjiang; optional)
4 bundlesdried udon noodles
Your choice of vegetables, as desired
Thinly sliced pork (for shabu-shabu), as desired

Mix all the sauce ingredients together.

Slice the vegetables and boil the pork.

Cook the noodles, then chill them in ice water and drain well.

Arrange everything on a plate.

Pour the sauce over and enjoy.
