Take all ingrediant.

Take pan add oil in it when heated add cumin seeds, curry leaves, asafoetida and then add cut onion fry it well and then add cut tomato, chilli,chilli powder, termaric,goda masala,ginger garlic paste mix it well and fry for 1 min.

Then add Bamboo shoots and vaal fry it well,add 1 cup water,keep lid on it and cook for 20/25 minutes.Bamboo shoots are cooked then add jaggery, grated coconut, coriander leaves and cook for one min.

Bamboo shoots and vaal curry is ready.Garnished with grated coconut and coriander leaves and served with rice or chapati.
