Ingredients

  1. 1 tbspolive oil
  2. 1large onion, chopped
  3. 1large carrot, chopped
  4. 2 tsp(or 1 tbsp) curry powder
  5. 1 candiced tomatoes, drained
  6. 1 cupdried lentils
  7. 4 1/2 cupslow sodium chicken broth
  8. 1 cupwater
  9. 1/2 tspblack pepper
  10. 1/4 tspsalt

Cooking Instructions

    Heat oil. Cook onion and carrot for 5 mins. Stir in curry powder, cook for 1 more minute.

    Add tomatoes, lentils, broth, water, and 1/4 tsp pepper.

    Bring mixture to boil, reduce and simmer for 45 mins (or until lentils are tender).
