Wash, peel and grate beetroot.Boil eggs and potatoes separately.Cool and mash the potatoes.There should not be any lumps in the potatoes. Care should be taken so that potatoes are not mushy after boiling.Add salt to taste, pinch of sugar, red chilli powder,garam masala and gramflour to the mashed potato and mix well.Peel the boiled eggs and slice into half.Smear 1/4 tsp salt in the eggs and set aside.

Heat 1 tbsp oil in a pan and fry the onion till light brown.Add ginger garlic paste and saute it. Next add the grated beetroot and fry till moisture dries up. Add the mashed potato, chopped green chillies, mix well and fry.Add chopped coriander and mix well.Set aside to cool.

Make a slurry of all-purpose flour adding 1/4 cup water and set aside.Take a small amount of beetroot masala and flatten it on your palm.Put half egg over it and cover the masala over the egg.

Dip it in flour slurry and roll over the breadcrumbs. Double coat to get a crispy crust.Refrigerate for an hour to set. Heat oil in a pan and fry on medium heat Beetroot Egg Chops flipping till they turn crispy golden brown on the outside while soft inside.

Remove from oil and place on a kitchen tissue.Sprinkle black salt and few chopped coriander on top. Serve hot along with green chillies, sliced onion rings and Tomato Sauce.
