Ingredients

10 Kababs
  • Main Ingredient:
  • 238 gshelled green peas (from 500 g green peas)
  • Other Ingredients:
  • 4 tbspsemolina (rava)
  • 4 tbsprice flour
  • 3green chilies (adjust as per taste)
  • 3 tbspwater
  • Spices:
  • 1 tspkitchen king masala or garam masala
  • 1/2 tspturmeric powder
  • 1 tspdry mango powder (amchur)
  • 1/8 tspasafoetida
  • 1 tspsalt (or to taste)
  • 1/2 tspajwain (crushed between palms)
  • For Frying the Kababs:
  • 2 tbspoil
  • For Super Tasty Spicy Green Chutney:
  • 1large bunch coriander leaves (cleaned and washed)
  • 1 sprigcurry leaves
  • 15cashews (soaked in hot water for 15 minutes)
  • 5-6green chilies (adjust to taste)
  • 2large shallots
  • 5 clovesgarlic
  • 1/2-inch ginger
  • 1 tbsproasted cumin powder
  • 1 tbspblack pepper powder
  • 1 tspsalt (to taste)
  • 1 tbsplemon juice
  • 4ice cubes

    For Kababs:
    Coarsely chop green peas using an electric or hand chopper. Transfer to a mixing bowl.

    Mix in semolina, rice flour, and finely chopped green chilies.

    Add all the spices and crushed ajwain. Add 3 tbsp water and mix well with hands to form a soft mixture.

    Cover and rest for 15-20 minutes until the semolina and rice flour absorb the water. Knead the rested mixture.

    Grease hands with oil and shape into kababs.

    Heat oil in a pan on low flame. Fry the kababs for 4-5 minutes on each side until golden brown.

    Drain excess oil on a kitchen towel and serve hot with green chutney.

    For Chutney:
    • Blend all chutney ingredients to a smooth paste. Adjust salt and lemon juice as needed.
