Spinach Pakoras : Take besan in a bowl. Add finely chopped spinach & 2 tsp water. Whisk very well till the batter is light. Add 2 tsp of water & beat well so the pakoras will be light & soft. The batter should be dropping consistency.

Add chopped coriander, chopped onions, chopped green chillies,ginger paste, carom seeds,kasuri methi & salt Mix.

Heat oil in a pan. Add a pinch soda in it & 1 tsp water & mix. Drop pakoras in hot oil & deep fry them till light golden in colour. (the green color of spinach & coriander should be visible). Remove & keep aside.

For dry kadhi masala : Dry roast all the masala & crush them with pestle and mortar while hot. Keep aside.

Kadhi : Beat curd & besan.In a pan, take mustard oil & heat it. Add cumin seeds, dry red chilli,asafoetida, ginger, garlic paste & onions.Saute. Add Kadhi masala & mix.

In a bowl, mix red chilli, turmeric & amchur powders with 2 tsp of water. Keep this masala paste aside.

Add hot water in curd - besan mixture. Add masala paste. Add kasuri methi, sugar & salt. Add hot water to make the Kadhi thin as it will thicken on boiling & also when you add the pakoras, it will thicken more.Cover & boil for 5 - 7 minutes.

Tempering No 2 : Take ghee in a small tadka pan, heat it & add cumin seeds & dry red chilli. Once cumin seeds crackle, switch off the flame. Add this tempering on the Kadhi. Keep aside.

Herbed Rice : Take ghee in a pan & heat it.Add cumin seeds & let them crackle. Add rice, green peas, chopped mint chopped curry leaves & chopped coriander & mix with light hands or toss. Switch off the flame & keep it aside, covered

How to serve : Add the pakoras and boil the Kadhi for 5 minutes. Now take the Spinach Pakora Kadhi in a bowl & place it in the center of a serving plate. Surround the pakora Kadhi bowl with Herbed Rice. Serve the Pakora Kadhi -- Chawal Thali / Plate immediately & relish a wholesome meal this monsoon.
