Sometimes I just want a quick bowl of vegetables for dinner, so I see which frozen vegetables I have on hand and make a medley. Here's one that I put together this evening.

Ingredients

5 minutes
1 serving
  1. 4-6frozen brussel sprouts
  2. 1/2 cupfrozen shelled edamame
  3. 1/2 cupfrozen corn ketnels (raw or roasted)
  4. 4-6frozen artichoke heart slices

Cooking Instructions

5 minutes
  1. 1

    Put all frozen veggies in a microwave safe dish

  2. 2

    Add several tablespoons of water

  3. 3

    Cover and microwave 3 minutes or until tender.

  4. 4

    Drain water. Toss with olive oil, lemon juice and salt free seasoning.
