Fried Yam and Egg sauce

Cooking Instructions

Slice yam in desired shaped and wash, drain in a sieve and sprinkle salt and set aside

Break eggs, add a dash of salt and whisk, once you are done, set aside

Heat up frying pan and add vegetable oil, once the oil is hot, start frying yam, once its cook through and abit crispy, remove and place in an oil drainer; for the record I love my fries very cripsy

Once you are done frying the yam, reduce oil from the frying pan and leave at least 2 tbs worth in the frying pan

Add onions, tomatoes and pepper, then stir for about 3mins, add a dash of salt and stock cube if you wish, I don't use stock cube for my eggs

Pour whisked eggs into the frying pan and scramble tills the eggs and tomatoes is thoroughly mixed up and the egg is fried

Serve yam fries with tomatoes scrambled eggs
