Ingredients

8 wraps
  • 1.5cups, browned mini pepperoni
  • 8tortilla wraps
  • 8eggs, scrambled
  • 1/2 cupmozzarella cheese, shredded
  • 1/2 cupgouda cheese
  • 1/4 cupextra sharp cheddar
  • 1/4 cupparmesan cheese, shredded
  • 1 cupspinach, roughly chopped
  • 1/2fresh tomato, chopped
  • 1/2bell pepper (any colour), chopped

Steps

  1. 1

    Arrange everything on a tortilla.

    Lightly toast on a griddle or pan

    You can wrap them in a paper towel, then tin foil. Place in zip lock bag in freezer for up to 2 weeks. Remove tinfoil and microwave for 1 min (in the paper towel)

    ENJOY!
