It’s my mom’s favourite dish.
Steps

Fry onions in oil and sauté until golden brown. Now it’s a safer option to cook tomatoes in the oil to fry before adding the spices that is why I am doing that safer method here. First add the tomatoes, then add the spices.

Sauté the tomatoes mixture until the texture is thick and it’s water is evaporated.

Fry the eggplants and capsicum in oil and put those vegetables in a separate pot.

When the tomato curry is cooked add the eggplants in the curry.
