Plants and trees get fresh tender leaves and fresh flowers, new crops arrive in Market and it's a season of abundance. Maa Saraswati is worshipped on this day with Saraswati Pooja and special bhog of Khichdi, Sweet rice, Yellow coloured, saffron flavoured mithais and snacks. Kids start their first day of holding a writing pan or chalk and start their handwriting practice on this day. First, sieve the poha to remove any impurities and wash under running water 2 to 3 times. Drain out excess water.

Transfer to another bowl, pour 1/2 cup water and keep covered to soak for 20 minutes.

In the meantime, heat oil in a kadhai and pop mustard and cumin seeds. Saute for a few seconds, add asafoetida, curry leaves and saute till aromatic.

Then add green chillies, onions and a dash of salt to speed up the cooking of onions. Saute on medium heat till translucent. Then add tomato and stir cook for 5 minutes till softened. Then mix in the vegetables, 1 tablespoon of roasted peanuts and stir cook till spices are well combined.

Then add turmeric powder, chill powder and stir well. Now mix 1/4 teaspoon turmeric powder, 1/4 teaspoon chilli powder, salt and sugar in the poha and turn well with a fork to mix the spices.

Add to the kadhai, turn well for 5 to 10 minutes till soft and aromatic. Sprinkle 1 teaspoon of water, cover for 5 minutes and cook.

Then the poha is ready. Mix in lemon juice, adjust spices and serve in a plate or bowl. Top with coriander leaves, roasted masala peanuts and fresh grated coconut for extra taste! Also add a lemon wedge.

Enjoy with pickle, fresh curd, Nagpur style Tarri, Kadhi or chana curry.
